Mild

Ingredients:

  • 4 ripe tomatoes, diced
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 green bell pepper, diced
  • 1 jalapeño pepper, seeded and minced (optional)
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Combine tomatoes, onion, garlic, bell pepper, and jalapeño in a large bowl.
  2. Add lime juice and cilantro.
  3. Season with salt and pepper.
  4. Mix well and refrigerate for at least 1 hour before serving.

Medium

Ingredients:

  • 5 ripe tomatoes, diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 jalapeño peppers, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

 

  1. Mix tomatoes, onion, garlic, and jalapeño in a bowl.
  2. Add cilantro, lime juice, and ground cumin.
  3. Season with salt and pepper.
  4. Stir well and let chill in the refrigerator for at least 1 hour.

Hot

Ingredients:

  • 6 ripe tomatoes, diced
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 3 jalapeño peppers, seeded and minced
  • 1 habanero pepper, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 3 limes
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  • Combine tomatoes, onion, garlic, jalapeño, and habanero peppers in a bowl.
  • Add cilantro, lime juice, and ground cumin.
  • Season with salt and pepper.
  • Mix thoroughly and refrigerate for at least 1 hour before serving.

Very Hot

Ingredients:

  • 6-8 tomatoes, diced
  • 2-3 habanero peppers, finely chopped
  • 1 jalapeño pepper, finely chopped
  • 1 red onion, finely diced
  • 3 garlic cloves, minced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Optional: 1-2 teaspoons sugar

Instructions:

  • Combine tomatoes, onion, garlic, jalapeño, and habanero peppers in a bowl.
  • Add cilantro, lime juice, and ground cumin.
  • Season with salt and pepper.
  • Mix thoroughly and refrigerate for at least 1 hour before serving.

Extremely Hot

Ingredients:

  • 6 ripe tomatoes, diced
  • 1 large onion, finely chopped
  • 5 cloves garlic, minced
  • 5 jalapeño peppers, seeded and minced
  • 2 habanero peppers, seeded and minced
  • 1 ghost pepper, seeded and minced (use gloves)
  • 1 teaspoon chili powder
  • 1/2 cup fresh cilantro, chopped
  • Juice of 4 limes
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  • In a large bowl, mix tomatoes, onion, garlic, jalapeño, habanero, and ghost pepper (handle with care).
  • Add chili powder, cilantro, lime juice, and ground cumin.
  • Season with salt and pepper.
  • Mix thoroughly and refrigerate for at least 1 hour before serving.
